This is because the total time depends on the amount and type of data that you are transferring from your old iPhone to your new iPhone. The Wi-Fi Network speed and connection also plays a major role in it. Some data and settings are transferred directly from your old iPhone and the rest from the App Store and iCloud (if you use iCloud).
I will give you my example, where I used Quick Start to transfer data from an iPhone 12 Pro Max to an iPhone 14 Pro Max. I had approximately 200GB of data to be transferred which consisted of Apps, Videos, Photos, Music and other documents and data. It took me approximately 2.5 hours from start to finish.
