My Apple Watch five will not pair with my new iPhone 14 Pro. I was able to unpair the watch from my older iPhone. It tried to pair with the new iPhone and stalled now it won’t pair at all and says unable to connect. Tried restarting iPhone and watch. Still unable to connect. Is there any other option besides resetting the watch?

Doing a factory reset on the watch is not a big deal compared to a factory reset on a phone.
Go into Watch Settings, General, scroll down to Reset.
Let it do its thing and then pair it to your new phone and when asked, restore it from a previous backup.
