The iPhone 7 will not cease working based on its support status, but—like all else—will eventually and inevitably degrade and fail, and Apple repairs will not be available. In Apple terminology, “Obsolete” means no parts and no repairs.
You might be able to find third-party parts for some parts, if you’re inclined to pay for and install those.
iPhone 7 originally being from 2016, it’s an old design, and is not supported on iOS 16 and newer.
Apple app developers tend to support the three most recent versions or so, maybe a few more than that, so you have a few years before the apps and app updates will start to become more problematic.
An iPhone 1 still works. It’s just not all that useful. And not useful for various reasons.
