There are some built-in Apple apps that you cannot delete but the following has a list of which ones you can. Delete built-in Apple apps from the Home Screen on your iOS 14 or later or iPadOS device or Apple Watch - Apple Support

There isn't any big advantage by deleting them. You may save a little space but that typically isn't a big issue. On the other hand, if you do delete them you can always add them back using the instructions in the above support article.

I've never used about 1/3 of the apps in that list but I haven't deleted them. I just moved them all into a folder that I titled "Unused" and they're there if I want them.

The time when you should not delete built-in apps is when your device starts getting really old, such as 5+ years old. Then if you delete apps you may find that versions compatible with your device are no longer available. For example, I have an iPhone SE (gen 1) and it tops out at iOS 15. We're on 16 right now, so in a year or so my phone will be two iOS versions behind. That means support will start dropping and not all developers keep versions for anything but the last two versions up for download. So before the next iOS release I better make sure I have all the apps I ever will want on this particular phone, and also hope that I never have to redownload them. Infact since Iupgraded to iOS 14 on this phone I have seen a drop off of battery life and it makes me reluctant to want to ever go upgrade any farther. I already see some apps only have versions that would require an iOS upgrade in order to download them.

Frankly, I find Numbers and Pages are apps I never use. For those I want a full size monitor. I don't want to be viewing a large spreadsheet on something the size of a postcard.
