Can I limit with my family charges on my payment method?
My son continues to buy things using his phone and Apple Pay without needing my permission first. Is there a way to stop that?

Depending upon the age of the son there's Approve what kids buy with Ask to Buy - Apple Support
If the son is an too old for ATB then your only option is to speak with him and tell him you will remove him from the family group if he doesn't curb his spending.
