Photos downloaded from iCloud
I downloaded all of my photos and videos from iCloud, but the date on many of them changed to the date of the download. How can I get the actual date taken when downloading?

You cannot. When you download, you create a new file with the download date. The date taken is retained in the metadata on the file.
Alternatively, if you sync with the Photos App on your Mac, the original date can be retained when exporting an unmodified original.

Sorting Items by Date:
Download the Photos, and then view them in File Explorer on a PC. On a Mac, you'd use the Photos App to view these. Go Here: Download iCloud Photos and Videos - Apple Support
I don't have a Mac, I'm on a PC. However, more than not, the dates are the dates I actually took the photo. So I don't understand your response.
I have only opened them in Explorer, and hundreds are stamped with the date of download.
