You can hide your identity online if you have an iCloud+ subscription and activate Private Relay (Or use a 3rd party VPN app) - this does not, however, apply to the location that friends see in e.g. Find My Friends. The only thing you can do is stop sharing your location with your friends, or completely disable location sharing in the apps you don't want to know your location.
Go to:
Settings > Privacy & Security > Location Services.
