All song downloads sold in the iTunes Store are encoded in AAC/256.

The lossless tracks that you have heard about from Apple are only on the streaming service. They are not for sale as purchased downloads.

If you are looking for lossless or hi-res music downloads, go to other retailers such as Bandcamp, Beatport, and HDTRacks. If you shop there, download the tracks in a compatible format and add them to your iTunes/Muisc library.
