Is it possible to use QuickStart to transfer ENTIRE iPhone 6S across to an older iPhone 6 model?
If so - are there any specific steps to follow - to ensure a smooth transfer?

In general Quick Start is used to go from an older device to a newer one, however it can be used to move from a more recently released model to an older one provided both are compatible.
We'd recommend ensuring both devices are fully updated to their respective iOS versions under Settings > General > About.
