To resolve the issue of the screen, not displaying the time upon raising the wrist, I keep seeing discussions where people are being directed to General and then Wake Screen within the Watch app Settings. I definitely do not have this ‘Wake Screen’ option. Does anyone else have this problem?

In General, Return to Clock there are settings to decide whether to keep the app screen on or the clock.
And on Display & Brightness, Wake on Wrist raise and Wake on Crown Up (on the watch) and Wake on Crown Rotation (on Watch app on phone)
