Hey 1917MOEN,

If you recently removed an email account from your device or signed out of an account or out of iCloud, that could cause notes to go missing if they were stored in that account. You can learn more about that here: Add or remove accounts in Notes on Mac - Apple Support

We'd also suggest checking to see if the missing notes are located in the recently deleted section. This article explains how: Delete a note on Mac - Apple Support

"View a recently deleted note

  1. In the Notes app  on your Mac, click Recently Deleted, then select the note.
  2. The Notes window with the Recently Deleted folder in the sidebar and a recently deleted note. You only see the Recently Deleted folder if you’re using iCloud notes or notes on your Mac.
  3. Do one of the following:
    • Recover a recently deleted note: Drag a note from the Recently Deleted folder to another folder in the sidebar.
    • Remove a recently deleted note from your device: Click the Delete button  (or press Delete).
    • Permanently delete a recently deleted note: Delete or replace all of its contents. Since the note is synced to all of your devices, doing this effectively deletes the note right away.

"
