Storing document on MacBook and not on the cloud

Purchased new MacBook Pro -Ventura. (2/1/2023) I don't want to use the iCloud for the storage of documents - I want to store them on my computer only.. How do I do this..

By turning off icloud in the settings and by filing it in your Documents folder - you can treat that like a filing cabinet and make sub folders with names so you can easily find things.
