Is there a way to highlight text in Notes yet?

Mmm, don't know of any way to highlight text in Notes.
You can change the text colour:
ie: Select the text
Choose Format in the top menu,
Choose Fonts > show colours
Choose the colour

As previous mentioned by @brbo you can used the combination of Command t to change the font for specific text in the note.
You can change is to Bold, Bold Italic etc but Highlight - think not
