How do you change font color on watch, need to change from white to a darker color

You can change the color of type on some watch faces, but not all of them. If you pick one that can be changed, the easiest way is to use the Watch app on the iPhone. In "My Watch" you can pick a face you've previously chosen and tap the Edit button.
Or, in Face Gallery, you can choose a new face. You can play with the controls to see what changes. In the Simple face I've chosen above, the font of the "complications" can change color. Hitting "Add" will add the new face to your collection.
