The most important reason to update your iPhone (assuming you mean software and not getting a new iPhone) is security updates. When Apple updates iOS, there are often updates to things that keep things like your private data protected. Outside of that, new features or improvements and fixes are often in updates.
Just a suggestion...you may want to put something more descriptive than just "Why" as your question in the Title.😃
