Hide My Mail cannot be deactivated, it is part of iCloud+, but you can delete the generic email addresses so that you do not receive any more emails from your created generic email addresses.
Go to: Settings > Apple ID > Hide My Email.
Tap on the email address(es) you want to delete. Select Deactivate Email Address
After that, go to Inactive Addresses, tap on the one(s) you just deleted, and select Delete Address.
