What is the best Apple Watch for swim training?

I would like it to auto detect my sets in a pool swim. I also swim open water. The ultra watch looks incredibly expensive and I would be scared of losing it so I’d prefer not to spend that much.

Apple Watch SE does not track swim intervals? I just bought an Apple Watch SE specifically to track my swims. Previously I've used various models of Garmin, which do that job well. This time I decided to try the Apple Watch. However, I think I made the wrong decision. It appears that the watch will not track my intervals. So, for example, if my workout calls for me to do 10 100-yard intervals on 1:30, there's no way for the watch to track that. Is that correct?
