Have you tried a right-click on the mailbox and then use the Rename option? This will apply for mail boxes you have created.
You can change others such as iCloud mail or an ISP email from Mail preferences > Accounts. Just type in another 'description' and this will appear in the mailbox list.

Very odd - It doesn't offer me a rename option - when i click on the mailbox name literally noting happens
Is this mailbox one of those with the name set in Mail's preferences, as I have described, or is it one you have created (which will be a sub-folder of the first sort)?
Its a Mailbox I have created to help manage and sort my various emails
