To update using this method, I am told I need a software update, which is downloaded but fails to install. What is the update, why will it not install, etc.
If this is a problem, can I update to an iOS 14 without such difficulty?

Well, you omitted some pertinent facts here. The update is actually to your computer. Since a Finder reference got you here, presumably the computer is a Mac. We don’t know what operating system name and version you’re using, which is highly relevant here.
If the operating system is not too ancient, the update may be able to proceed anyway without the software update.
If you were running the current version of MacOS Ventura you would not require an update.
