How do I get the Apple Watch to identify itself on my list of internal network devices. It's showing up as unknown device. I don't like seeing unknown devices on my network.

I saw your question a few days ago but I didn't have an answer for you and apparently, neither does anybody else.
There are too many differences between ISP's and equipment.
For my internet equipment, I named my watch, my wife's watch, and all our other devices using the app that my ISP provides.
This might be a good reason to call your ISP to see if they can help you out. It might be hard for them to know how if you are using 3rd party equipment.

Apple devices only transmit MAC addresses and you need to rename the devices in your router admin menu.
For Watch it is in My Watch, General, About, Wi-Fi address
