I am not a "butthurt apple diehard." Not even sureI know what that even means. But I am an engineer and I like to be quantitative, and leave the drama to others.
Let's explore your use of the term "bloatware."

The apps you listed are all by and from Apple, not from third-party providers. The third party provider apps, like Avast which has come on PCs in the past pre-installed, are the ones that have a history of being dangerous, at least on PCs.
Of the apps you listed, the largest is Music, which weighs in at 100 MB or so. My laptop came from 1 TB, so the largest of those programs takes up one tenth of one thousandth of my storage. That's 0.0001 of my storage. The others are much smaller in disk space.
The apps you listed take up no battery power. Unless you run them while on the battery. No one makes you use these apps. I do concede that if you view the Applications folder, more items are listed there due to the presence of the Apple apps that are built in to the MacOS.
Not an Apple diehard. We use Mac, PCs (windows), and Linux machines where I work and we need them all. I use a Mac more than the other options because I like the interface better than the Windows one or the Linux one. My observation is that over the years, Windows and MacOS have grown closer in the user interface than they were many years ago.
One good thing about those Apple apps: you can ignore them all, and use others that you prefer instead. There are third party alternatives to all of them. It's up to you. I find some of those apps better than others. I don't use Apple's Calendar, Apple Mail is somewhat low-end in some respects, I find Photos ok for personal photo storage but we don't use it in the small photography business my daughter runs, Music is ok for what it is but people in my family seem to like Spotify, and I rarely use the TV app (but do use our Apple TV device a great deal), and I use Notes a great deal. Stocks and Weather are nice to have, there are alternatives. It's up to you. The unused apps have no impact on your computer.
