So after updating the watch software to version 8.7.1, watch has stopped recording any data from heart rate sensor, activity tracking, wrist wake.
Tried hard reset, erasing all content, works for briefly 1 time then again same story. Contacted apple authorised service centre- cannot fix it. Think somekind of software problem, any way to downgrade as this is the last official version I suppose

Put the watch on power reserve mode then restarted the watch. Sensors and everything working again just fine(not sure how).
It sounds like a sensor has died.
Apple ended support for that Series of watch and rather than throw money at trying to get it fixed, I would recommend that you look into a new SE 2nd Gen.
