These "Find My" questions are the ones that I tend to read then leave without trying to help.
This is my Series 8 (GPS + Cellular).
I honestly don't know if it's going to work or not. I figure that I'll just buy another one if I somehow lose this one.

Here is my theory, right or wrong. I believe when Notify When Left Behind is activated, the notice is sent when the non cellular watch is disconnected from the iPhone. I also activated this setting for my AirPods which are definitely not cellular (no option for that!). And I get a notice if I leave them them behind.

The "Find My" is just confusing to me and so that's why I just try to read and learn.
So, the screenshot that LD150 and I provided are equal to each other while the screenshot that the author provided is clearly not the same.

If you go into the Settings of your paired iPhone... Settings, > Privacy & Security, > Location Services and then scroll down a little ways, do your settings look like this:

You wouldn't get a notification on airpods either if you left the phone behind.
Like Pilerman I put this on notify to see who would answer!
I wonder if OP Galina125 may have more than one iphone??

General bad behaviour
If all settings normal but behaviour is irrational there is a progressive hierarchy of remedies...
First force restart the Watch
i.e. press and hold both the side button and Digital Crown for at least 10 seconds, then release both buttons when you see the Apple logo.
Then, although it may seem irrelevant, while it is restarting Force Restart the paired iphone Force restart iPhone – Apple Support (UK)
If it is still misbehaving... Unpair and set up again
Unpair and erase your Apple Watch – Apple Support (UK)
and then
Set up your Apple Watch – Apple Support (UK)
You may also want to make sure the software on the watch and iphone are both up to date to the same level.

If you want the Watch to find the phone it will need cellular.
Having said that, following Carol B's advice mine shows this and I don't have cellular
