I'm at a loss here.

Using your watch, open Settings, scroll down to and click on Heart, scroll down to and click on "High Heart Rate Notifications"
Where is the checkmark? Mine is on 110 BPM.
Go back then click on "Low Heart Rate Notifications"
Where is the checkmark? Mine is on 40 BPM.
Since 2019, I have 181 recordings for "High Heart Rate"

In the screenshot in my original post, you can see where the data was coming from.
"Jeff's Apple Watch" was a Series 3 watch.
"Jeff's Watch 8" is my current watch (Series 8)
In all that time (2019 to now), I've never had a "Low Heart Rate" event notification. Likewise, in the Data Source of the Low Heart Rate screen, there aren't any devices listed.

The "High Heart Rate" notifications only happen when my watch determines that my heart rate has been higher than 110 BPM, for at least 10 minutes, and while I don't appear to be active.

This is the conclusion that I'm coming to:
Although things are setup and ready, I don't believe that you have had any episodes that meet the requirements for a notification (heart rate at or above the BPM setting that has lasted for at least 10 minutes while inactive). Until these conditions are met, there isn't going to be a device listed in that section of "Data Source" (like there isn't anything listed for my low heartbeat Data Source).
If Apple comes back with a different conclusion and/or even gets a device to show up in that field, please PLEASE come back to this thread and let us know what they did so that we can help others more efficiently.
