Why is Mail now putting emails I have sent in my inbox 3 days later? Have I inadvertently changed a setting, and if so how do I change it back?

It sounds like you may be referring to the new "follow up" feature added to the Mail app on the Mac. The resource below provides information and instructions to disable the feature.

"Get reminded to follow up on emails with no response
If you send a message and don’t receive a response in 3 days, the sent email automatically resurfaces to the top of your inbox to help you remember to follow up.
