Since before the recent update my Apple Watch 5, keeps crashing/shutting down, unexpectedly
I’ve tried all troubleshooting;
Turning off and on, force restart
Unpairing / Repairing (twice), once from back-up and once as new device
Even the latest update hasn’t worked.
What now??

Have you checked the "Battery Health" of the watch?
Using the watch, open Settings, > Battery, > Battery Health
What percentage of Maximum Capacity is shown? Less than 80% and you should consider having it replaced.
