Hello hammmmmmm,


The Notes app on your iPhone has multiple Markup tools you can use to customize and edit your Notes entries. Take a look at the descriptions of these tools here: Use Markup on your iPhone, iPad, or iPod touch - Apple Support. The Undo and Redo options can help you change things up in an unsaved Note.


For Notes that you've already saved, the most recent version will be the one that will be available to you, unless you have a copy saved before the most recent save point was made in an iTunes or iCloud backup. If so, you might be able to restore your iOS device to that older backup point and regain access to the unchanged Note. But please be aware, that will remove all other content on the device made after the save date as well.
