What are you airdropping to?
When I AirDrop from my Mac Photos to my iPhone, the original date and location come though. When I AirDrop from my iPhone to my Mac, the date that shows in the Finder is the date that it was sent, not the capture date. But the metadata has the original date, and when loaded into Photos the original date is shown. For me, it's all there.
