Go to Settings/General/Software Update and see what it says. If it doesn’t offer 15.7.1 that means that you still have an iOS 14 beta version on your phone. You need to delete the beta profile in Settings/General/Profiles. And it’s something to think about before signing up for a beta again; once you install a beta you are stuck with that version.
