How to store notes on iPhone not iCloud

I want to store my notes on my iPhone not on the cloud. When I go to settings iCloud and turn off Synch it says it will delete everything.

Last week I was camping and had no cell coverage I have some checklists and items to access.

How can I tell Notes to save on the iPhone Not iCloud?
