Some of my recipients receive this message, which obviously makes them think someone is impersonating me. I'm able to replicate it when I send an email from Gmail using Mac Mail and then open up the message in iOS Mail. Everything seems fine when I stay entirely within Mac Mail.

I think I may have solved my problem. I had digital signing turned on. I turned it off, and now everything looks the way it should when an email shows up on my iPhone or iPad. It seems counterintuitive to do something that seems less secure in order to get rid of error messages, but there you go.

Hi, John -- Upper right, directly above the Signature bar. In this image, it's a gray "X." If I click, it becomes a blue check. As I said, clicking it off solved my problem.
