Since the last update my watch is incorrectly recording hours and hours of exercise and standing time. I get up in the morning and my green ring starts spinning and says I’ve done 355 minutes of exercise and stood for 12 hours during the night. It’s done this 3 times in the last week. I have latest updates on phone and watch.
First force restart the Watch
i.e. press and hold both the side button and Digital Crown for at least 10 seconds, then release both buttons when you see the Apple logo.
Then, although it may seem irrelevant, while it is restarting Force Restart the paired iphone Force restart iPhone – Apple Support (UK)
Test it for a while. If it is still misbehaving... Unpair and set up again

and then
Set up your Apple Watch – Apple Support (UK)
You may also want to make sure the software on the watch and iphone are both up to date to the same level.
ie ios 16.3.1, watchOS 9.3.1
