I am using iCloud Drive with all my Data.
In addition I MANUALLY copy all my important folders and files to an external drive every month.
This is in addition to Time Machine.
Regarding 3rd party software like ChronoSync or CCC , They can replace the manually actions and keep my Data more updated.
If I will use these 3rd software , Can my Data be expose as these 3rd software can "see" my data ?

If you're already using Time Machine, there isn't really a reason too backup everything manually; certainly you can if you wish, but it's not necessary.
Third-party software can "see" your data to back it up, of course. But, it's only on your machine and your hard drive.
Similar question here: I think about transferring all my private data from MS onedrive to icloud. There are some apps which have access to my icloud data - like whatsapp, which makes a backup to icloud. Can those apps see my data or to they have their own separate space in icloud? Can every app with icloud access see all my data?
And another question:
I am not able to activate advanced data protection an "end to end encryption" for my icloud files, as my macbook is too old an running on catalina and still connected to my apple ID. So is it safe to use icloud without end to end encryption?
