Are you speaking out the contact app or in the messages app?
In the contacts app you can favorite a contact Manage and delete contacts on your iPhone or iPad - Apple Support
In the messages app you can drag a conversation to the top of the list Keep track of conversations in Messages on iPhone - Apple Support
