Why am I getting a storage full on my apple watch Ultra. "try removing music or photos using the apple watch app on iPhone" my watch is only 1 mo old and says 31.7 GB of 32GB used. ????

If your new photos and videos are being automatically "pushed" and saved to your Apple Watch, then the device's storage fills up really fast. This also happens with music.
I would suggest manually choosing which photos and videos are sent to your watch.
Using your iPhone...
Open the "Watch" app
Scrolling through the apps (Photos, Music, etc) Select which photos, videos and songs your Apple Watch Ultra stores on its internal storage.
