Can an iphone be hacked by opening a Gmail PDF?
So I opened a pdf from an anonymous source on gmail that was very obviously a scam…I haven’t updated my IOS in a while…is there a chance I could get hacked?

Not from a PDF. But update your phone, and keep it updated. Security is not a wall that you build that keeps everything out forever; it is an arms race. Apple plays their part of the arms race by updating whenever a new vulnerability is discovered.
