First, purchase your new iPhone.
If you customize your order with more memory or a different color, it may not be available in stores, requiring an online order.
Continue using your current iPhone until the order arrives.
When setting up your new iPhone, you will be prompted to wirelessly transfer everything, so be sure your current iPhone is fully charged (this transfer could take several hours to complete).
Once everything is complete, then you can prepare for the trade-in for an Apple Gift Card.

Purchasing an iPhone, Secondhand:
I not purchased from Apple, then be certain you perform the purchase safely. If the seller never logs out of iCloud on it, then you'll never be able to use it with your Apple Account. Have the seller perform as instated here, including the iCloud logout: What to do Before you Sell, Give Away, or Trade In your iPhone or iPad - Apple Support. Then, request that you log into it, prior to handing over the money. If the seller decides to disabide by those rules you've set forth, then do not proceed with the transaction.
To amend Smilin-Brian’s response:
The iPhone 6, released by Apple 8½ years ago, is too old to have any trade in value. You may submit it to Apple for recycling if you wish.
That’s correct.
The Trade-In Recycle program will offer free recycling as an incentive.
