I want to use this iPhone in Poland. I am using a different iPhone. Now I have arrived in Poland and I want to give SE to my sister. How can I unlock it so it works here? help me please

Then you have to remove the iPhone from your account, see this Apple article:

Check your Apple ID device list to see where you're signed in

Then your sister can sign in with her own Apple ID.
