I want log out of email on Macbook
Upon logging in my email is always open and visible how do I log out? Others use my MacBook

Quit the Mail app prior to logging out, or de-select the "Reopen windows..." checkbox shown below:

If you want to share your Mac with others, either add them as authorized users of that Mac, or enable the Guest User:

Change Guest User settings on Mac - Apple Support
No one but you should be able to log into your User Account.
