How can I remove the organizer from family sharing under my iCloud account?

The Organizer is the one in charge of a family group. If another person is the organizer, you are part of their group, they aren't part of yours. You can't remove them from a group that isn't yours.
Perhaps you could outline in more detail what is going on and what you wish to achieve.
