Hi! To redeem a gift card, go to the App Store and click your profile picture in the top-right corner. Click redeem gift card. The balance will apply to your Apple ID, so any Apple apps can use it (ex. to buy Apple products in the Apple Store app or buy a month of Apple Music). In addition, other apps can also use its balance for in-app purchases.
