Is there any way to pin a message in a convo as a reminder?

It is not possible to pin a single message in a conversation in the Message app. However, you can set a pin for the entire conversation, just long press on the conversation and select "Pin"
Alternatively, you can copy the message you want to pin and paste it into a reminder in the Reminders app.
