Text colour changes in Notes, iOS iPadOS 15

Please provide option to turn off hashtag link formatting as I need to type out # for sharps regarding musical notes to myself and it changes the color to orange. Completely annoying.

Please also provide UNDO within iOS Notes. Accidental delete is too easy to happen, and such undo would be very helpful.

Colour changes (unwantedly) when some combinations of hash key and characters are typed, for example typing ###B#—BOB causes the text colour to change after the ##, the colour varies between iOS and iPadOS 15.3. It works in Notes an Reminders but not Pages or Calendar.

It seems hash followed by any alphabetical character changes the colour and a space or hash turns it off .
