The Mail app is the issue here.

Using Predictive Text in Mail:

You Can't. You can't edit Predictive Text in the Mail App. So, see about using your eMail provider's eMail app (If existent).

So, Recommend this to Apple:

Do your Part: Being of no option, let apple know what feature(s) you want to see addedApple wont get back to you directly, but the more they hear of this, the more they will know what their customers prefer and what features need to be added.

  1. Go Here: Feedback - iPhone - Apple
  2. Select: "Feature Request" for the "FeedbackType"
  3. Comment: that you want to be able to change this. Include the URL of this thread.
  4. Proceed from there as necessary

Troubleshooting AutoFill:

AutoFill I think is what you are referring to. Tried this Site?: Change AutoFill Settings in Safari on Mac - Apple Support

eMail AutoFill/Predictive eMails:

It all has to do with Mail Server syncing. So, you'd have to disable this on your eMail provider's side.

  1. Go Here: Address emails in Mail on Mac - Apple Support
  2. Scroll to: Send to individual email addresses
  3. As it Reads: "As you type, Mail shows addresses that you previously used in Mail or that it finds in the Contacts app. If you’re connected to network servers—for example, at work or school—it also shows addresses found on those servers."
