I’m trying to watch the next episode of a show with my Amazon Firestick but on the screen there’s just a button says “How to Watch”. When you click it, it takes you to a page that has the Apple TV+ logo then says “You can buy, rent, or subscribe in the Apple TV app on iPhone, iPad, and other streaming devices.”

I have Apple TV+ and I am logged into the correct email address. I have looked at previous answers that advised to go into setting then iTunes but there is no iTunes in setting anymore.

does anyone know how resolve this issue?

What show were you trying to watch? It seems to be from a streaming service that the current account doesn’t have access to (on that device).

The Apple TV app on Fire TV devices doesn’t currently support in-app transactions. That means that any subscribing, renting, or buying, will have to be done on a different supported device first.

“2. On Amazon Fire TV, Android TV, and Sony TV devices, you can't purchase content from the Apple TV app. You can buy, rent, or subscribe on another supported device and then watch in the Apple TV app on your Amazon Fire TV, Android TV, or Sony TV device.” [2]

To start, you should ensure that you have a model that supports Apple TV: Apple TV app - Devices - Apple

If so, Contact Apple Support for guidance. They will be in the best position to support you.
