where is the sim number found on a 6s iphone so I can switch phones

The SIM number is found on the SIM card itself and also by opening Settings ➡️ General ➡️ About ➡️ ICCID: This is your SIM number which can be visible if the SIM card is still inserted in your iPhone.

Which phone are you switching to? You should be able to just switch the SIM card from your iPhone 6s to your new phone. If you are planning to use an eSIM with your new iPhone (Depending on the model) then contact your carrier to help you with the switch.
