How do I delete history on my watch? I have information from years ago from old watch.

How do I delete old year’s history from my new watch? Also, how do I use and set goals?

Other than completely erasing the watch, I don't believe you can delete your activity or workout history.

There are Activity goals and Workout goals.

Here's how to change your move goal in the Activity app:

  1. Open the Activity app on your Apple Watch.
  2. Go to your rings, then firmly press the screen.
  3. Then tap "Change Move Goal".
  4. Tap to increase or decrease the number of active calories for your daily Move goal.
  5. When you're done, tap Update.

For some reason (with watchOS 5 and 6), you can change the Move goal, but not your Exercise or Stand goals.  This was changed in WatchOS 7 so that you can now change all the goals. See the "Change your activity goals" section in:

Use the Activity app on your Apple Watch - Apple Support

In a workout, tap the circle with the 3 dots in the upper right corner to set/unset workout goals.

You may then actually have to perform a workout for the "new" goal to stick.

Also see step 3 in the 'Start a workout' section in:
