I understand that I can't update my Series 3 watch to the newest update, but can I still pair it to my phone? I don't understand how something from Apple can simply not be functionable because it's not able to be updated. I'm cool with not having the newest update but I want it to be paired. I'm not buying a new one to do this same thing in a few years.

Theoretically, it is possible to pair a series 3 watch with the newest iPhone & iOS. FWIW a lot of people have had trouble updating a series 3 watch. With the limited memory in a series 3 watch, your best option may be to make an appointment at the Genius Bar in an Apple Store near you and let them look at it:
