Battery Health Management

Is it ok leave my macbook pro M1 2020 13" plugged in most of the time during use? And when I do use it unplugged, it is typically for an hour or so at a time, however, do I need to drain the battery all the way down?

Yes, it is okay to keep it plugged in most of the time during use.

Your description of your pattern of use sounds just fine to me.

There is no real good reason to run the battery all the way down these days. That may have been recommended in the past, but I believe battery tech has improved so this no longer applies.
