The majority of the substitution is done by using a different keyboard translation or "Input Source". This allow you to use the keys you have to type ANY language supported by MacOS, once you have added a different Input source. There are also third party input sources available for even more obscure keyboard translations. You can switch quickly between input sources to mix languages.


Touch typists are trained to never look at the physical keyboard, as that would slow them down. If needed, a Keyboard CHART is placed near the text being entered or the display.


If you are talking about exactly what glyphs appear on the physical keys, the cost to have Apple substitute a different physical keyboard with different keycaps is VERY expensive. You are far better off applying stickers or using a permanent marker instead, and relying on your typing chart.
